From the lower portion of Chapelot that isn't entitled to the premier cru appellation, Piuze's 2018 Chablis Terroir de Fyé wafts from the glass with aromas of pear, apples, fresh mint, beeswax and oyster shell. On the palate, it's medium to full-bodied, satiny and layered, with a racy but textural profile and a saline finish. One of the more elegant wines in this range, it's well worth seeking out. - WA91
Smoky aromas of matchstick, pear and tidal pool can be found on the gently expressive nose. Here too there is very good volume to the mouth coating and opulent medium weight flavors that despite fine richness retain plenty of punch that carries over to the bone dry and saliva-inducing finish. Born in January 1973 in the province of Quebec in Canada, Patrick is the third child in four of a bourgeois family that nothing predestines in the wine world.
When he comes of age, Patrick Piuze has a meeting that turns his professional life upside down. He meets Marc Chapoutier who helps him acquire his first experiences in the wine industry.
Thanks to him, he travels the world and works in several winery in Australia, South Africa, and Israel. He returned to his native province in 1997 to set up a wine bar in the heart of the city of Montreal, “Le Pinot Noir”.
He established the culture of tasting there and, on the strength of his two years of catering and sommelier, he nevertheless retains the desire to rediscover the atmosphere of the wine cellars and estates he is particularly fond of.
It was in the summer of 2000, with a backpack for only luggage, that Patrick PIUZE left for one of the most beautiful regions of France, Burgundy. He joined the cellar team of Maison Olivier Leflaive in Puligny-Montrachet for a harvest season. After a short training at the CFPPA in Beaune, Olivier Leflaive entrusted him with the entire vinification of his Chablis vat room.
He then developed all his know-how there, but stopped four years later in favor of another wine merchant, Maison VERGET, where Jean-Marie GUFFENS passed on his passion for the terroirs to him.
Patrick PIUZE then began to be recognized as a true winemaker, and this notoriety led him to be recruited the following year by Maison Jean-Marc BROCARD as Cellar Master.
It was during this period that Patrick PIUZE made the most important decision of his life by creating his own Trading House on July 1, 2008, challenging himself to set up alone.

This mode of operation allows him to select the most beautiful plots of the Chablis vineyard, made mainly from old vines, and to harvest very high quality grapes.
Purchasing mainly grapes, he concedes to the merchants a range from Chablis (four different terroirs), to Grands Crus (six references including Les Preuses and Grenouilles) through a range of eleven Premiers Crus. 110,000 bottles will thus be produced.
