Nose: An enticing and complex bouquet with a fresh edge. Layers of citrus fruits, honey and dried flowers combine with fleshy fruits and a subtle touch of spices.
Palate: Astonishingly fresh with heady hints of strawberry and a white flower finish.
An elegant champagne with a light texture and delicate, understated aromas. Makes the perfect partner for a sophisticated dinner in the company of those who enjoy good things.
Pairing suggestions: Sea bass with beurre blanc sauce and creamed parsnip. - Winemaker's Notes
A specialist in Pinot Noir, the cellar master, Christian Forget, strives to preserve the signature of the house with wines of great elegance and uprightness, fully expressing the richness of the Bouzy terroir. Succeeding her sister Chantale, Evelyne Dauvergne takes over the management of the operation in 2018. Proud to put into practice the traditional and family values transmitted by her father, who died in 2015, and eager to develop the business by adapting to requirements of the 21st century, she wishes to continue this beautiful story with a mixture of madness and wisdom. - Information from Champagne Paul Bara
