Paracombe Shiraz wine was made from grapes harvested from mid to late March when showing the best possible flavours and quality from the Drogemuller family vineyard and specialist local growers at Paracombe.
2012 was an excellent vintage, ideal even ripening conditions gave us optimum fruit quality and good yields for this wine.
The harvested grapes underwent slow, cool ferments and then gently pressed to gain a soft extraction of flavour and tannins. The wine was put to French Oak barriques to gracefully mature for around twenty months.
Paracombe Shiraz will delight with lifted aromas, beautiful rounded flavours, and hints of white pepper typical of Paracombe Shiraz style. This vintage’s dark ruby colour accompanies an intense bouquet of cherries, plums, pepper and spice and cool climate elegance.
The palate offers stunning flavours, layered with long spicy fruit, fine tannin structure and subtle oak. A complete wine to enjoy for many, many years with cellaring. That is, if you can keep your hands off it!

The remarkable Paracombe wines story started in 1983 following the Ash Wednesday bushfires when Paul and Kathy Drogemuller bought an old dairy farm at Paracombe in the Adelaide Hills in South Australia. With no background or experience in grape growing or winemaking, they planted a vineyard and so began their dream.
Together with hard work, passion and vision Paul and Kathy expanded the vineyard, designed and built a winery with facility to crush up to 2000 tonnes of fruit, underground cellars and stunning cellar door. Son Ben works in the family business and daughter Sarah in hospitality, helping out with events. The Drogemuller family and Paracombe’s dedicated, dynamic team have worked together to build a very successful, award winning, family business.
Paracombe wines are proudly handcrafted from the beginning to the end, with grape growing, winemaking, storage, packaging and distribution all done on site ensuring complete care for the production of beautiful wine made to enjoy.
